I love to cook. It is passion that has developed in my adulthood. With any major gathering or holiday, I embrace the opportunity to try new recipes or take the lead with the menu planning. This past weekend’s Christmas Holiday was no exception. For Christmas Eve, I prepared Mixed Green Salad with Craisins, Walnuts, Bleu Cheese and Balsamic Vinaigrette, Three Cheese Stuffed Shells and Clementine Cake. Steak was on the menu for Christmas dinner so I offered to make Twice Baked Potatoes and a Wedge Salad with Homemade Ranch Dressing. It was going to be a great weekend with family, friends and of course … food!
The Christmas Eve and Christmas Day dinners did not disappoint; both meals were savored. One of the great perks with the holidays are the leftovers. Today my husband and I enjoyed some leftover Wedge Salad with the Homemade Ranch Dressing. The Ranch Dressing was great yesterday (there is something about mixing together fresh ingredients, especially fresh herbs). But today, it was AMAZING! With some extra time to marinate and marry flavors together, the Ranch Dressing was out of this world! I proclaimed to my husband that I was never going back to the bottled stuff and making it from scratch from this point forward! I know that is not always practical but the recipe has everyday pantry ingredients and it is so simple that it is perfection!
So my friends, I encourage you all to try Homemade Ranch Dressing. I understand if you use the bottled stuff for everyday use, but for a special occasion I encourage you to make it from scratch … it will be a revelation!
