Tacos are in my blood! I think they are part of my DNA. If you conducted a DNA test you would find that I am 55% Tacos. Why? Because growing up and even now I have tacos at least once a week but more realistically 2-3 times a week. Fish Tacos, Chicken Tacos, Beef Tacos, Breakfast Tacos, Turkey Tacos, Dessert Tacos, you get the idea. Tacos are perfect for the end of the week when you have a little of this and a little of that in the fridge. Throw the odds and ends in a tortilla and you have dinner. They are also great for parties because you can put all the fillings and toppings on the table and your guests can build their own taco! No worrying about if one friend eats meat or if the other friend likes spicy salsa. They can choose what they want.
But for today I want to talk about when you intentionally want to make tacos! The nights when you have planned tacos for your dinner menu. On these nights I would pull out a pound of ground meat, a taco seasoning packet, my skillet and get to work. The more I cook, the more I want to know what I am eating. One of the intentional taco night,s I looked at the ingredients on the back of the taco seasoning packet and only recognized half of them, that bothered me. I also realized that of the ingredients that I recognized I had all of them in my pantry. I was now on a mission to concoct my own taco seasoning mix. This was not an easy mission because I was looking for a specific flavor, hard to pin point but my taste buds knew what they were looking for. Not only did I want it to work with ground beef but also ground turkey. I also tested it by rubbing it on chicken breast for a grilled chicken taco salad. I was looking for a multipurpose taco seasoning. After months of testing, changing measurements, and adding some ingredients I have come to the perfect combination. Don’t be scared by the number of ingredients, they each serve a wonderful purpose. I recommend making a big batch of taco seasoning so it’s ready for many meals. Make a double batch and give some to a friend!
- 4 tablespoon Chili Powder
- 2 tablespoon Masa Flour
- 1 tablespoon Ground Cumin
- 1 tablespoon Salt
- 1 tablespoon Ground Black Pepper
- 2 teaspoon Onion Powder
- 2 teaspoon Garlic Powder
- 2 teaspoon Dried Oregano
- 2 teaspoon Paprika
- 2 teaspoon Smoked Paprika
- 1 teaspoon Unsweetened Cocoa
- ¼ teaspoon Crushed Red Pepper
- Mix all spices in container.
- Recipe makes approximately 12 tbls (3/4 cup) total.
- FOR TACO MEAT
- Brown 1 pound of ground meat in 12 inch skillet on medium heat.
- Add 2 tablespoons of Taco Seasoning and ¼ cup of water.
- Let cook until all liquid and seasoning is absorbed.
